Grape Variety
Cyprus indigenous white grape Xynisteri 85% blended with Malvasia Grossa 15%.
Preparation
Grapes are collected early in the morning, transported to the winery and crushed,
de-stemmed, pressed, transferred to the stainless steel vats and left to ferment at
controlled temperatures (15º to 16ºC).
Characteristics
The blending of Xynisteri with Malvasia Grossa results in a balanced, refreshing and dry
wine with a pleasant taste and aroma.
Ageing Period
It is recommended that the wine be drunk in its young period, up to three years of its
being produced.
Food Pairing
White meats, hors d’oeuvres, pasta and fish.
Serving Temperature
Best served chilled (10º to 12ºC)
